Chocolate Molten Souffles

Ingredients

12 tablespoons (1.5 sticks) butter, softened

1 pound semisweet chocolate in small peices

8 medium eggs

1.5 cups sugar

1.5 cups all purpose flour


White chocolate sauce-

1 cup heavy cream

8 ounces white chocolate chips


1. preheat oven to 350

2. use 2 tablespoons of butter to grease 8 small pyrex bowls (we got ours at table le sur). make sure all surfaces are completely covered otherwise the souffles will stick!

3. place 10 remaining tablespoons butter with dark chocolate pieces in top of double boiler & melt completely, stiring occasionally with a rubber spatula

4. break eggs into workbowl of food processor, add sugar and melted chocolate. process until mixture is smooth (about 15 seconds) add flour & process until mixture is smooth. (we use a electric mixer for this part bc our foodprocessor is too small. it works out fine either way =)

5. pour equal amount batter into each pyrex bowl, place bowls on baking sheet, and bake in oven for about 20 minures*, or until the mixture begins to rise & the center is still soft to the touch. remove from oven, but dont let them cool for more than a couple of minutes before carefully inverting them onto small serving plates.


*while souffles are beaking, make white chocolate saure. bring heavy cream to boil in a medium sauce pan. turn off heat & add white chocolate pieces. stir with rubber spatula or wooden spoon until chocolate has melted completely.


6. pour white chocolate sauce generously around each souffle and sprinkle each with powdered sugar. dessert is best served warm.
