Curried Carrot Soup

Yield: 4 cups (960 ml)

6 medium carrots, cut in large pieces
2 cups (480 ml) low sodium vegetable stock
1 small onion, peeled
1/2 cup (120 ml) plain soy milk
2 teaspoons curry powder

1. Place all ingredients into the Vitamix container in the order listed and secure lid. 
2. Select Variable 1. 
3. Turn machine on and quickly increase speed to Variable 10, then to High. 
4. Blend for 4 to 5 minutes or until steam escapes through lid. Serve immediately.

note: Can use lowfat or skim milk instead of soymilk
