Tomato Onion Cheese Soup

Yield: 2 1/2 cups (600 ml)

1 cup (240 ml) low sodium chicken, vegetable, or beef stock
1/4 cup (40 g) chopped onion
1/4 cup (28 g) shredded sharp Cheddar or Swiss cheese
1 tablespoon tomato paste
1 large tomato, quartered

1. Place all ingredients into the Vitamix container in order listed and secure lid. 
2. Select Variable 1. 
3. Turn machine on and quickly increase speed to Variable 10, then to High. 
4. Blend for 5-6 minutes or until heavy steam escapes through the vented lid. Serve immediately.
