Yam and Apple Casserole

Ingredients
4-6 Parboiled red yams
1 20 oz. can pineapple – crushed or tidbits
2 raw red apples – cored and sliced
3 T ground cinnamon
1 Cube butter
Rind from 1 orange
Juice from 1 orange
3/4 c Brown sugar
3/4 granulated sugar
4 T cornstarch

Directions
Sauce:
In a small sauce pan combine sugar, cornstarch and mix well. Drain pineapple and reserve. Using juice from the orange and drained pineapple add water to make 2 c of liquid and add to sugar and cornstarch–missing well. Bring to a boil and cook until thickened. Remove from heat and add grated orange rind and butter. Cool slightly and add pineapple. Peel parboiled yams and slice in circles. Place a layer of yam circles in a 9X13 baking dish and sprinkle with brown sugar (about 1/4 c) layer thinly sliced apples and sprinkle with cinnamon (about 1 T). Pour a layer of sauce. Repeat making 3 layers. You may use more brown sugar and cinnamon if desired. Bake at 350 until hot –about 20 minutes.
