2 c flour
1 T baking powder
1 t ground cinnamon
1/4 t salt
2 eggs
1 c milk
1/4 c vegetable oil
1/2 c brown sugar
1 t vanilla
TOPPING:
1/4 c butter, melted
1/4 c brown sugar
1 c shopped pecans
In a large bowl, combine flour, baking powder, cinnamon and salt. In another bowl, beat the eggs, milk, oil, brown sugar and vanilla til smooth. Stir into dry ingredients just until moistened. Into each greased muffin cup, spoon 1 t butter, 1 t butter, 1 t brown sugar and 1 heaping T pecans. Top each with 1/4 c batter. Bake at 350 for 25-30 mins or until muffins test done. Invert pan onto a piece of foil. Let stand for 2 mins; remove pan. Serve warm.
