6 boneless, skinless chicken breasts
2 eggs
salt and pepper
2 t garlic powder
1 c Italian bread crumbs
1/2 c Parmesan cheese, grated
1/2 lb. butter
1 t parsley, chopped
Juice of 1 lemon
1/2 lb sliced mushrooms
Directions
Beat eggs with salt and pepper and 1 teaspoon garlic. Combine bread crumbs, 1/2 teaspoon garlic and cheese in another bowl. Dip each piece of chicken in egg mixture; roll in crumb mixture. Repeat. Arrange in shallow pan. Melt butter, 1/2 teaspoon garlic, parsley, andlemon juice. Pour 1/2 mixture over chicken. Bake at 350 for 40 minutes. Sprinkle mushrooms and remaining butter over chicken. Return to over for 5-10 minutes.
