Pineapple Cheesecake

      1 cup crushed
      2 cup water
         Bring to a boil
      1 cup diet cream or 7up
      2 pkg gelatin
        Mix and add above mixture. Chill until syrup blend and add:
      1 cup vanilla
      Pinch of salt
      Artificial sweetener
      1 1/3 cup ricotta cheese


Topping
 2 crushed pineapple
 1 pkg art sweetener
 1 t pineapple extract

 2 cup cold water
 1 pkg gelatin
     Blend bring to a bowl add to gelatin which has been dissolved in 1/8 cup cold water. Refrigerate for 2 hr
