Thai Chicken

2 in piece of ginger root
Creamy poppy seed dressing (bottled)
4 cloves of garlic
2 medium cucumbers
2 red bells peppers (or yellow, orange)
2 (12 oz) pks- broccoli slaw
2 (6 oz) bags baby spinach leaves
(or rice if you want to serve over rice instead of spinach)
2 lbs boneless chicken breasts
1/2 c fresh basil leaves
1/2 c peanuts (optional)
